Easy, Satisfying Morning Glory Muffins with Apple and Carrot

  • muffin linersor cooking spray
  • 2cups whole wheat flour
  • 1/2cup granulated sugar
  • 1/4cup brown sugar
  • 1tsp cinnamon
  • 1tsp baking soda
  • 1/2tsp salt
  • 2medium carrotspeeled and grated
  • 1medium applegrated
  • 1/2cup raisinsor dried cranberries
  • 1/2cup walnutsor any nut of your choice, chopped
  • 1/2cup coconut flakesoptional
  • 1/4cup flaxseedoptional
  • 2 eggssub flax eggs if needed
  • 1/2cup buttermelted
  • 1tsp vanilla extract
  1. Vegans only: If using a flax/chia egg: add 2 TBSP flaxseed or chia seed to a bowl with 6 TBSP water. stir and let it sit for 15 minutes until it has a goopy consistency (like an egg!)
  2. Preheat the oven to 350 F. Prepare a muffin tin with liners or cooking spray.
  3. Mix the flour, white sugar, brown sugar, salt, cinnamon and baking soda in a large bowl.
  4. Mix in the grated carrot, apple, raisins, walnuts, coconut and flaxseed.
  5. Add the butter and eggs/flax eggs to the bowl and mix well until the wet and dry ingredients are fully combined. The batter will be on the thicker side.
  6. Use a 1/4 measuring cup to add the batter to the muffin tin. You might have a little extra batter leftover for more muffins (or a mug cake, which is what I did!). Bake for 20-25 minutes. That’s it!
Recipe Notes

If you need to make these vegan, use flax or chia seed eggs. You need 2 flax/chia “eggs” for this recipe.

  • Combine 2 TBSP ground flaxseed meal or chia seeds with 6 TBSP water.
  • Let the mixture sit for 15 minutes at room temp or in the fridge.
  • The final result will be goopy, like an egg.
