This pasta salad saved my life this week.
I’ve been working mostly out of coffee shops and eating outside or in places without a microwave… and this meal is just SO GOOD cold or at room temperature.
What you need to know about this pasta salad:

If you’re not a fan of bell peppers and olives, I recommend these veggies that are good raw: red onion, cherry tomatoes, peas, carrots, sliced zucchini and cucumbers.
For protein, I suggest a few options:
- chickpeas or pinto beans, rinsed and drained from a can
- veggie/meat sausage. I like Lightlife for veggie sausage and Aidell’s chicken apple sausage. That would need to be cooked for just a few minutes in a pan with a splash of olive oil.
For the pasta, I suggest using farfalle (bowtie) pasta, but any short/small variety would do (penne, rotini, etc).
Storage & Reheating notes:
This meal doesn’t need to be reheated and is meant to eat cold!
I have not tested it in the freezer, so I’m not sure if it’s freezer friendly.
It can last in the fridge for 4-5 days. Bon appetit!
