Berry Parfaits with Homemade Granola

Ingredients

For the granola

  • 1 cup old fashioned oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 TBSP butter
  • 3 TBSP brown sugar
  • 1/2 cup coconut flakes optional

For everything else

  • 3 single-serving yogurt of your choice
  • 3 cup blueberries sub raspberries or strawberries
  • 3 tsp honey optional for drizzle

Instructions

  • Preheat your oven to 325 F.
  • Melt the butter in the microwave or on the stove and stir in the brown sugar. Set aside. Mix the oats, cinnamon, salt, and coconut flakes in a bowl. Pour in the brown sugar mixture and mix well with a spatula. Pour the oats onto a baking sheet and spread them out slightly. Bake for 20-25 minutes, stirring halfway. The oats should be golden brown in color when finished! Let them cool on the pan.
  • Add the yogurt and one-third of the fruit to a jar or container and seal. Repeat with the other two containers and store them in the fridge. Leave the granola on the side if you want it to stay crunchy and add as much as you'd like before eating! Granola can be stored on the counter at room temp for a week or up to 2 weeks in the fridge.
