Basic Homemade Granola (Vegan, Gluten-Free)

Ingredients

  • cooking spray
  • 2 TBSP coconut oil or butter, melted
  • 1 cup old fashioned oats use GF if needed
  • 1/2 cup walnuts chopped
  • 1/4 cup pepitas
  • 1/4 cup coconut flakes optional
  • 2 TBSP agave, maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup chocolate chips use vegan if needed

Instructions

  • Preheat the oven to 300 F and coat a rimmed baking sheet with cooking spray.
  • Add everything except the chocolate chips to a bowl and mix thoroughly with a spoon.
  • Pour the mixture in the pan and spread it out evenly. Bake for 10 minutes, then take the tray out and stir the mixture. Bake for another 5 minutes, stir and place the tray on your stove to let the granola cool. It will continue baking a little on the hot sheet pan too.
  • After it's cooled (about 20 mins), then you can add anything else like chopped dates, chocolate chips, chia seeds, etc.
  • To assemble you can put the granola in one big container or divide it into three containers (about 1/2 cup-1/3 cup of granola per container).

Notes

If you want a crispier, clumpier granola, beat one egg white well and toss it with the oats and the rest of the ingredients before baking. Let the granola cool on the baking sheet for as long as possible and toss carefully with the add-ins, to preserve the clumps!
