Easy Vegan BBQ Jackfruit

Ingredients

  • 1 20 oz can of green jackfruit in brine drained, rinsed and shredded
  • 1/2 yellow onion chopped
  • 2 cloves garlic minced
  • 1 TBSP olive oil
  • 3/4 cup BBQ sauce your choice
  • 2-3 tsp cumin
  • Dash cayenne or crushed red pepper to taste, if you like heat! optional
  • Salt and pepper to taste
  • 1 lime cut into wedges, optional

Instructions

  • Drain the jackfruit in a fine mesh sieve and rinse it. Transfer to a bowl and use two forks to pull apart the jackfruit pieces. It will resemble shredded meat. Set aside.
  • Heat oil in a large skillet over medium heat. Once it's hot, add the onion, stir and saute for a few minutes, until fragrant. Stir in the garlic.
  • Stir the reserved shredded jackfruit inito to the skillet, followed by the cumin, salt, pepper and barbecue sauce. Stir well to combine.
  • Cook the jackfruit mixture, stirring occasionally, for about 7 to 10 minutes. Taste and adjust flavors if necessary. Serve with rice, quinoa, or in a wrap. Squeeze with lime if desired.
