Pineapple Coconut Overnight Oats

Ingredients

  • 2 cups coconut milk
  • 1 cup rolled oats
  • 1 cup frozen pineapple
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp maple syrup
  • 4 tsp chia seeds
  • 2 tsp lime juice
  • 1/2 cup granola any kind, for topping

Instructions

  • Divide all ingredients except the granola between two glass jars with lids. Whisk with a fork to combine.
  • Refrigerate overnight or up to 8 hours. In the morning, stir and top with your favorite granola.

Notes

Leftovers will keep in the fridge for up to 5 days.
