The oat crumble stays pleasantly crisp around the edges while the blueberry filling becomes soft and jammy. Even after a few days in the fridge, the texture holds up well, which isn’t always true for fruit-filled breakfast bars.
They’re also easy to portion ahead of time, making mornings feel just a little less hectic.
My Tips for Making the Best Blueberry Breakfast Bars
Don’t Skip the Flax Mixture
If you’re making the dairy-free version, let the flaxseed and water sit for a few minutes before mixing it into the dough. That extra time allows it to thicken, helping hold everything together as the bars bake.
Fresh or Frozen Blueberries Both Work
I use whichever I have available.
Fresh blueberries are wonderful during peak season, but frozen blueberries make this recipe something I can bake year-round. If you’re using frozen berries, there’s no need to thaw them first.
Process Only Some of the Oats
One trick I love is blending only part of the rolled oats into oat flour while leaving the rest whole. The oat flour helps bind everything together, while the whole oats give the bars a heartier texture that feels more satisfying than using flour alone.

How I Make These Bars
This recipe comes together with just a couple of bowls and a food processor.
I start by mixing the ground flaxseed with water and letting it thicken while I prepare everything else.
Next, I pulse some of the rolled oats into a coarse flour before mixing them with the remaining whole oats, coconut oil, sugar, vanilla, and the flax mixture to create the crumble.
Most of the mixture gets pressed into a parchment-lined loaf pan to form the base.
For the filling, I gently mash the blueberries to release some of their juices before stirring them together with sugar, lemon zest, and cornstarch. The cornstarch thickens the fruit as it bakes, creating a filling that’s soft without becoming runny.
I spread the blueberry mixture over the crust, crumble the remaining oat mixture on top, and bake until the topping is lightly golden.
Easy Ways to Customize This Recipe
One reason I make these bars so often is that they’re easy to adapt based on what I already have.
Some of my favorite variations include:
- Swapping blueberries for raspberries, blackberries, strawberries, or a mix of berries.
- Using fresh or frozen fruit depending on the season.

Dairy-Free Blueberry Breakfast Bars
Ingredients
For the crust and crumble
- 2 cups old-fashioned rolled oats divided
- 2 tbsp ground flaxseed plus 2 tbsp water
- 1/2 cup coconut oil or vegan butter, cut into pats
- 1/4 cup granulated sugar
- 2 tsp vanilla extract
- 1/4 tsp sea salt
For the blueberry filling
- 1 1/2 cups fresh or frozen blueberries
- 2 tbsp granulated sugar
- 1 tsp cornstarch
- 1 tbsp lemon zest
Instructions
- Soak flaxseed and water mixture together in a small bowl to thicken.
- Pulse one cup of oats in a food processor until finely ground.
- Transfer the ground oats to a medium bowl and combine with the remaining 1 cup oats, flax-water mixture, coconut oil, sugar, vanilla extract, and salt. The dough should be moist and stick together when squeezed or clumped together.
- Press 1 1/2 cups of oat mixture into the bottom of a loaf pan with parchment paper that's overlapping/hanging off the sides.
- Combine the blueberries, sugar, lemon zest and cornstarch in a separate medium bowl. Lightly mash the blueberries to release their juices. Stir to combine everything.
- Pour the blueberry mixture over the oat crust in the pan. Sprinkle the remaining oat mixture on top. Press the crumble topping gently into the blueberry layer. Bake for 35-40 minutes. Cool completely at room temperature before slicing into 8 small bars.
- Add 2 bars to large compartments of a meal prep container. Divide the yogurt and kiwi among the four containers in smaller compartments. Store in the fridge until ready to eat, up to 4 days.
