As the sole cook in my house, one with teenagers whose interest in food is mostly oriented around consuming it, rather than producing/creating/cooking it, there’s one thing I can tell you. It’s a beautiful thing indeed when someone else cooks for you. And if they’re making Mother’s Day brunch recipes, even better.
And if there’s another thing I can tell you about Mother’s Day, it’s that moms don’t necessarily need to be wined and dined. No, we just want someone else to cook for us, if at all humanly possible. We might want to stay in pajamas all day. We might want to sleep in. We dream these things are possible. If you have the power to make this happen for your mom, please consider it.
I can also say that this day can be a difficult time for some of us as well, for various reasons. And if that’s you, I see you, and I feel that, too. And while we are at it, there are so many people in our lives who may be like mothers, or who act as caretakers in some way, shape, or form, and they are always worth honoring, too. Maybe it feels right to do so on Mother’s Day.
But cooking is an act of necessity every day, but it can also be a very strong and silent act of love. So, from one mom to another, here are some Mother’s Day brunch recipes to consider.
Peaches and Cream Baked Oatmeal
The best part of this dish is that it can be assembled ahead of time and then baked in the morning. You can use frozen or fresh peaches, and any kind of yogurt you want—we like Greek with it.
Easy Shakshuka with Feta
I mean, how good does THAT look? It only looks hard. This would be a dish that a teenager could make, or that you could help supervise if you were feeling like you wanted to hang out in the kitchen while your family cooked. Everything cooks in one pan and this recipe calls for peppers, but shakshuka is pretty forgiving.
French Toast Bake
Find some deliciously eggy bread (even a store-bought, brioche-styled sandwich loaf will do). Gather up some eggs and almond milk. This is so easy for kids to prepare. Garnish as you like!
Easy Pancake Recipe
Pancakes are such a treat and they’re easy enough that kids can pull them off with a little supervision if needed. Melted butter in the batter always makes it better. Serve with mom’s favorite berries.
Baked Egg Boats
Imagine if you had quiche, but surrounded by a crunchy baguette. This genius recipe has been around a while, but this might be. your first time encountering it. You hollow out a baguette and then fill it up and bake it. And you can customize it, based on the ingredients you have on hand, very easily.
The Ultimate Waffle Brunch Board
If you’re serving a lot of people, adults and kids alike, it’s hard to resist this waffle board. The possibilities for toppings and fruits and sauces are endless. Prep the waffles ahead of time and devote the morning to setting up some version of this gorgeous board. Kids will have fun customizing it with things like peanut butter, berries, Nutella, granola, and so on. Or go savory and top with eggs, some veggies, you name it.
What are you going to make this Mother’s Day? Did this inspire you to try a new recipe and share?
