If there’s one thing I hear all the time, it’s “Give me more chicken recipes!” And I get it—chicken is the go-to protein for so many people. It’s affordable (especially if you go for bone-in cuts or thighs), easy to cook, and works with almost any flavor profile.
Whenever I’m stuck on what to make, chicken is usually the answer. It’s reliable, it’s tasty, and let’s be honest—it’s hard to mess up.
So if you’re looking to switch up your chicken meal preps or just want a solid, comforting classic, I’ve got you covered. These recipes are easy to prep, reheat well, and won’t have you spending hours in the kitchen.
And remember, even if a recipe calls for a specific cut—white meat, dark meat, boneless, bone-in—you can almost always swap it out for whatever you have on hand. Just keep it simple and make it work for you.
Budget Friendly Fried Rice with Chicken
I LOVE fried rice. It’s a great way to use up leftover rice but you can make it with fresh or previously cooked rice. Throw in some chicken, and a classic combo of carrots, peas, corn and green beans and you’ve got an easy to make, easy to reheat comforting chicken meal prep.
Pro tip: Did you know you could FREEZE leftover rice? Try this the next time you have some in the fridge. You can defrost in the fridge overnight, the microwave, or in a pan. Let frozen rice come to room temp on a sheet pan and it’ll be ready to roll in a dish like this!

General Tso’s Chicken
Skip the takeout! Make this awesome recipe at home, fast! I also love how few ingredients it requires; chicken, rice and some veg! Adjust the heat by adding more or less Sriracha. Double the sauce if you like it saucy or want to keep some of it on hand in the fridge. Future you will thank you!

No-Peek Chicken
Ahh, there are so many good chicken recipes out there, but this one is an absolute favorite. I love the name of this dish, but I love the simplicity even more—it’s basically a modern, low-effort casserole that delivers big on comfort.
It’s called No-Peek Chicken for a reason: once you cover it with foil and pop it in the oven, you set it and forget it. No stirring, no checking—just let it do its thing. And yes, it does call for a can of cream of mushroom soup (trust me on this one).
