Burritos are such a great lunch and dinner option, but making them for a breakfast meal prep is a game changer. And freezer-friendly breakfast burritos are even better.
It’s just a matter of a little cooking and a little assembling when it comes to burritos. They also happen to be an efficient way to use up any veggies you have in your fridge, or bits of random protein like sausage, ground beef, or even shredded chicken.
You’ll want to make sure you have some heavy duty foil on hand to wrap these up, and date and label the contents so you know which ones are which in the freezer. We like to pop these in the oven at 350 F for 15 to 20 minutes (depending on how dense they are) to reheat. You can always reheat them in the microwave, toaster, or regular oven.
The other great thing about these? Breakfast burritos are so portable if you need to bring breakfast with you. Feel free to reheat and pack it up, or defrost it overnight in the fridge so it’s room temperature for you when it’s time to heat. (Even still, though, you might like your breakfast burrito reheated! To each their own!)

A few tips about breakfast burritos!
- Make sure your ingredients are at room temperature when you roll these up to freeze. Otherwise it will be really soggy.
- You might find using an extra-large tortilla to be a good idea; it just gives you a lot of room to fold up tightly for a little spell in the freezer.
- Serve these alongside whatever typical taco or burrito toppings you like: avocado slices, sour cream, more shredded cheese, a squeze of lime, some salsa or hot sauce. It’s up to you!
- Feel free to customize based on what you have on hand. You can also safely add some rice, quinoa, or farro to these burritos if desired instead of the potatoes.
- These will work with gluten-free tortillas too. There are so many different kinds; experiment to see which one works best. Pro tip: straight up corn tortillas are not as flexible and tend to dry out more in the freezer.
