My sweet tooth really comes out during the summer. I think it’s because there are so many delicious fruits in season. Lately, I have been eating cherries before bed, which feels simply decadent. However, a bowl of fruit doesn’t count as dessert, especially for a chocolate lover like me. During winter, when I am craving sweets, I’ll bake easy desserts like blondies for a tasty treat throughout the week.
But with regular 90-degree days, I hardly want to look at my oven, let alone turn it on. That’s why I love experimenting with no-bake desserts.
If you’re like me and love the opportunity to get creative in the kitchen, here are some fresh and easy no bake desserts to make when you don’t want to fire up the oven.
Lemonade Icebox Pie

A friend from college introduced lemonade pie to me for the first time, and I have loved it ever since. This recipe is so easy and tastes like summer.
Eton Mess

Buy the meringue cookies from a bakery for this easy, creamy, sweet dessert that you can literally serve in a glass just like this.
Chocolate Peanut Butter Fudge

Eating fudge takes me back to childhood summers at the beach. I like this recipe because it’s only three ingredients that you might already have on hand.
Banana “Ice Cream”

Banana “ice cream” is a great option for a simple, vegan dessert that you can totally customize to your taste. Check out this recipe for tips on proper technique and some ideas for toppings and flavors.
Oreo Balls

These are another delectable dessert introduced to me by a friend from college (yes, I have the best friends). They are rich, delicious, and so easy to make.
Snickerdoodle Mug Cake

Still want something hot without firing up the oven? Mug cakes are the perfect solution! The added bonus is that you don’t have to dirty a bunch of dishes to enjoy dessert.
No-Bake Cheesecake

Strawberry cheesecake is my favorite sweet, so I had to add a no-bake option to this list. Make it your own with your favorite toppings; I also think caramel and chocolate chips would be delicious on this.
Vanilla Pudding

Pudding is such a nostalgic dessert for me. It reminds me of when my mom would pack my lunches. Try this vanilla pudding recipe for an oven-free dessert.
S’mores Icebox Cake

Nothing screams summer quite like an icebox cake, and this one takes the concept of s’mores and makes it sweet, cold, and delicious. No fire needed!
Tiramisu Pie

If you’re looking to get a little fancy, this tiramisu pie is the way to go. For something that looks beautiful, it’s deceptively simple to make.
No-Bake Chocolate Peanut Butter Bars

Chocolate/peanut butter is such a tasty flavor combination. If you can’t have peanuts, you could easily sub your favorite nut butter in this recipe. I bet almond butter would be delicious!
